Sunday, May 3: Cake!

Sometimes you just need some cake! The perfect treat for the perfect spring weekend. I’m usually a chocolate cake with vanilla buttercream gal, but I had a craving for vanilla cake with chocolate frosting, so, here we are! The cake could not have been easier — I used a recipe from King Arthur Flour that literally took minutes to prepare (and uses no butter or eggs) and ended up so tender, moist, and flavorful. The frosting was also a King Arthur Flour recipe, though I added more powdered sugar, since Matt and I like really sugary frosting :). Sprinkles added a fun, colorful touch! Matt and I could not stop eating this, and I imagine it will last about two days in this house — thank goodness it’s just an 8-inch cake, or we’d really be in trouble!

See frosting recipe here. (Note: I halved the recipe since I was just making it for an 8-inch cake, and we still had some leftover. I also ended up adding maybe 1/2-1 cup more powdered sugar, a little at a time, until it was to our desired sweetness. With the added sugar I also added a few more splashes of water to keep it a spreadable consistency.)
