Monday, March 30: Bowties with Pesto, Marscapone, and Veggies (Round 2!)

Yup, returning to one of our favorite simple meals! Whenever I’m at the grocery store I try to pick up a container of our favorite refrigerated pesto and a container of marscapone — there are so many ways to incorporate these two ingredients into meals, and this is one of them! We were running low of veggies (time for a grocery store run soon… eek), so this just has one zucchini and some fresh spinach. But adapt to what you have on hand — just follow the rule of sauteing your sturdier veggies first (like zucchini, asparagus, grape tomatoes), then adding the pesto and marscapone, and finally the more delicate veggies (spinach, peas) right before you add the pasta and lemon juice.
