Saturday, April 11: Smoky Chickpea Potato Stew

Baby, we’ve got a stew going! We love this Smoky Chickpea and Potato Stew recipe by Budget Bytes — hearty and healthy with kale, onion, fresh garlic and ginger, fire-roasted tomatoes, lots of smoked paprika and curry powder (I also added cumin), chicken broth, and of course the chickpeas and potatoes. SO GOOD!

You can see the original recipe here. I followed it pretty closely but made the following changes:

  • I added 2 tsp cumin along with the smoked paprika and curry powder.

  • Instead of 1 tsp grated ginger, I minced a 1 inch knob of ginger.

  • I used chicken broth instead of veggie broth (and I always use Better than Bouillon!).

  • I used one large bunch of Tuscan kale, torn into bite-sized pieces.
