Friday, April 17: Buffalo Cauliflower, White Bean, and Cheese Quesadillas (Round 2!)

I can tell this is going to be a weekly meal for us! It is just so perfect — a delicious combination of spicy buffalo sauce, charred cauliflower, creamy beans, gooey cheese, and crispy tortillas. Plus ranch for dipping! SO GOOD. And bonus: a surprisingly healthy dinner, with a dose of veggies, protein-packed beans, and (depending on the tortilla you use) whole grains.

See post with original recipe here. We used cheddar tonight and might have liked it even more than the pepper jack. Once again, we ended up eating a lot of the filling (roasted cauliflower/beans mixed with buffalo sauce and shredded cheese) with a spoon while we waited for the first batch of quesadillas to cook on the stove!
