Tuesday, April 21: Indian Tikka Masala-Inspired Veggie Stew (Round 2!)
After eating half a pan of brownies this afternoon, we needed a veggie-heavy dinner! Made our favorite tikka masala-inspired stew: garlic, ginger, spices (garam masala, turmeric, cumin, coriander, cayenne), chickpeas, roasted cauliflower, peas, spinach, crushed tomatoes, and coconut milk. Delicious! (This meal used the absolute last vegetable in my fridge, except for a stray carrot or two — time to brave the grocery store tomorrow for the first time in almost two weeks!)
