Tuesday, April 14: Triple Threat Onion Galette

Finally got around to making Basically’s Triple Threat Onion Galette! The flakiest crust EVER topped with Dijon mustard, a pile of parm, caramelized onions, garlic, and a whole lot of scallions. So good that we miiight have eaten the whole thing (there are two full sticks of butter in the recipe). Fair warning: this is definitely a project and took longer than expected, with making the dough, caramelizing the onions, and slicing the scallions. While I won’t be making it very often, and certainly not on a busy day, I think it’s fun to work hard on a more challenging, time-intensive recipe like this from time to time! And the results were impressive and delicious!!

See the Basically/Bon Appetit recipe here. I love the Basically website, as all the recipes include incredibly helpful step-by-step photos and videos!
