Wednesday, April 15: Farro with Arugula Pesto and Veggies (Round 2!)
Tonight’s very green dinner: farro, veggies (asparagus + zucchini), and our favorite homemade arugula pesto.
This is a repeat meal, since we loved it so much the first time! See original post with recipes for the pesto and farro/veggies here. Tonight we used asparagus and zucchini, but use whatever you have on hand — green beans, peas, grape tomatoes, spinach or kale would all be good! And while I love this arugula pesto, feel free to use your favorite store-bought or homemade pesto.
