Wednesday, May 27: Roasted Cauliflower, Sea Bass, and Zucchini with Lemon-Caper Vinaigrette
Say hello to my new favorite way of cooking cauliflower, courtesy of Bon Appetit! The cauliflower is sliced into planks and crumbles, roasted until super browned and crispy, drizzled with a tangy lemon-caper-olive oil vinaigrette, then showered with parm. So much flavor! Tonight I served it alongside roasted sustainable sea bass and zucchini (with extra lemon caper dressing of course!).
Wednesday, May 20: White Fish with Asparagus Pesto and Baked Potato Wedges
The star of tonight’s dinner was definitely the fries!! Hoooooly moly were they tasty (nice and crispy, but incredibly fluffy inside — and covered in Old Bay seasoning). Also delicious: lemony roasted white fish and my favorite asparagus pesto. Yum!
Thursday, March 19: Sausages, Mashed Potatoes, and Cabbage
Really feeling the comfort food these days! Tonight’s dinner was a plate of creamy marscapone-parm mashed potatoes, mustardy roasted cabbage, and my favorite Seemore broccoli melt sausage. Simple, nourishing, delicious!
Sunday, March 15: Roasted Veggies
Days where I don’t really feel like cooking a big, involved meal — or if I’m just craving a pan of salty, crispy roasted veggies — I’ll take stock of what veggies I have in my fridge and pantry and do a big sheet tray bake with a few different dipping sauces.
Tuesday, March 10: Smashed Potatoes with Romesco
I LOVE POTATOES. This is my current favorite kind: Yukon Golds boiled until soft, smashed flat, then roasted until super crispy on the outside and incredibly fluffy on the inside. Delicious as is, but even better? Dipped into smoky homemade romesco sauce.
