Wednesday, May 20: White Fish with Asparagus Pesto and Baked Potato Wedges
The star of tonight’s dinner was definitely the fries!! Hoooooly moly were they tasty (nice and crispy, but incredibly fluffy inside — and covered in Old Bay seasoning). Also delicious: lemony roasted white fish and my favorite asparagus pesto. Yum!
Thursday, May 14: Chickpea Shawarmas with Fries
Roasted up some potato wedges and chickpeas (both tossed with smoked paprika, cumin, garlic powder, and oregano), made a tzatziki sauce (creme fraiche since I was out of yogurt, plus fresh dill, shredded cucumber, garlic, and lemon), and halved a bunch of sweet lil grape tomatoes. Stuffed the chickpeas, tomatoes, and tzatziki in the softest pita, and served the fries on the side. SO good!!!
Monday, May 4: Lentil Ragu with Mashed Potatoes
I grew up eating (and LOVING) a lentil marinara sauce that we’d have with pasta. Tonight I made a version (adding in carrots, mushrooms, thyme, and red wine) that I ladled over super creamy marscapone-parm mashed potatoes. A lentil sauce that reminds me of my childhood + mashed potatoes = the ultimate comfort food!
Monday, April 20: Roasted Sausages, Potatoes, and Cabbage (Round 2!)
I don’t eat a lot of meat, but when I do, it’s Seemore Sausages :). Love these “broccoli melt” sausages, made with humanely raised pork, broccolini, pepper jack, and pepperoncini peppers. Tonight I served them with a huge pile of roasted tomatoes (that I tossed with the cheesy, spicy sausage drippings) and mustardy roasted cabbage. A great comfort food dinner!

Really feeling the comfort food these days! Tonight’s dinner was a plate of creamy marscapone-parm mashed potatoes, mustardy roasted cabbage, and my favorite Seemore broccoli melt sausage. Simple, nourishing, delicious!
Tuesday, March 10: Smashed Potatoes with Romesco
I LOVE POTATOES. This is my current favorite kind: Yukon Golds boiled until soft, smashed flat, then roasted until super crispy on the outside and incredibly fluffy on the inside. Delicious as is, but even better? Dipped into smoky homemade romesco sauce.
